A thick, chunky NYC style cookie filled with homemade croissant butter (if they made biscoff with croissants instead), blonde and white chocolate and crisp feuilletine,, rolled in more feuilletine, then topped with a toasted croissant crouton and more blonde chocolate.
The centre is soft and rich, the feuilletine adds crunch, blonde chocolate brings caramelised milk notes, and the croissant butter makes the whole thing taste somewhere between a cookie, a pastry and the best bit of a croissant. If you remember me fondly, remember me for this.
