Miso Brown Butter Chocolate Chip Cookie

Whipped miso brown butter, molten pools of 37% milk and 73% dark chocolate, finished with flaky sea salt. She’s not winning any beauty contests but my GOD does she make up for it in personality!!

The Science Behind The Bake!

I wanted the miso in this cookie to sit quietly in the background rather than announce itself immediately. To be quite honest, I’m not sure you would identify it as miso if I hadn’t told you it was there, but once you know, I think you can definitely taste that subtle savoury depth underneath the brown butter and chocolate.

I whisked white miso into deeply browned butter, then whipped the butter until it was pale and re-emulsified. The idea was to build a rich, toasted base with just enough salinity to sharpen the chocolate without making the cookie taste overtly salty or fermented (I would have loved this, but I don’t know how popular it would have been ha!).

I used a blend of flours and sugars to create a soft, chewy interior with crisp edges, then added chopped 37% milk and 73% dark chocolate so it would melt into irregular pools rather than sit in neat, uniform chips. Theres a whisper of blonde chocolate in there too as I think blonde chocolate and miso are a match made in heaven, personally.

Visually, I was aiming for a flatter, more rippled cookie. Because the whipped butter held quite a lot of air, they puffed more than I intended, so in that respect they have missed the mark slightly. They are still beautiful - soft in the middle, crisp around the outside and deeply chocolatey - and I’m really happy with how they taste. They’re just not quite the cookie I had pictured in my head, which is useful information for the next batch. I hope you will love them anyway, faces for the radio and all.
